특성
①시금치와 닮은 잎은 독특한 신맛이 있으며 예부터 샐러드, 요리용 허브로 알려저 있습니다.
②60~90cm 정도로 자라며 여름에 녹색이 낀 심홍색의 꽃이 핍니다.
재배방법 및 주의사항
①봄, 가을에 파종하며 포기나누기로 늘립니다.
②비옥한 땅, 반음지를 좋아하며 충분히 물을 주어야 합니다.
③40cm 정도로 포기사이를 두고 4,5장의 잎이 나오고 3~4개월 후 수확할 수 있습니다.
수확 및 이용
①잎이 들어간 허브차는 예부터 해열효과 있는 민간약으로 쓰이고 있습니다.
②신맛이 고기를 부드럽게 하므로 소세지, 돼지고기 맛 내는데 널리 쓰입니다.
③신선한 잎을 병에 채워 와인 식초를 부어 만드는 소렐식초도 만들어 놓으면 샐러드의 드레싱에 이용할 수 있습니다.
